There was a period during my sessions with Eileen that I could not have potatoes of any kind. I shared with Eileen that I missed the flavor and consistency of potatoes, so she came up with this delicious alternative for me.

EILEEN’S MILLET “MASHED POTATOES ”

1 cup water
1 garlic clove minced

1 onion minced

2 tbls oil of choice

1 1/2 cups cauliflower pieces

1 cup millet cooked

Freshly ground pepper to taste

In a large saucepan, saute the garlic and onion in the oil over moderate heat for 5 minutes, until softened. Add the cauliflower, and 1 cup of water. Cover and cook over low heat for 10-15 minutes until the cauliflower is fork tender.

In a blender or food processor, add cooked millet to the veggie mix & puree until smooth. Keep warm in a covered saucepan until ready to eat.

One very long, hot summer, I asked Eileen to share a quick lunch or dinner recipe for hot summer’s days.
Eileen also told me that Dr. Bieler favored cucumbers as a wonderful hot weather restorative as well as the “Bieler” staples, zucchini & summer squash.
If you have a sensitive digestive system or simply don’t do well with cucumbers, just omit them and add any lightly cooked summer squash in it’s place.
I hope you will enjoy this easy to prepare recipe as much as I have. It’s been a summer mainstay for many years.

EILEEN’S QUICK SUMMER SALAD RECIPE

1 cup lemon cucumber or English seedless cucumber thinly sliced
12-14 mini tomatoes halved (yellow are best as they are the least acidic)
2 cups cooked rice, kamut, or spelt elbow or rotelle pasta
1 cup chilled cooked zucchini sliced thinly before cooking al dente.
1 cup blanched & chilled brocolli flowerettes
2 cups julienned romaine lettuce
2-4 tbls raw, unsalted Pine Nuts (optional)
8-12 oz of your cooked protein of choice: chicken breast, turkey breast, fish, hard boiled eggs

DRESSING: Olive oil & Balsamic vinegar to taste or olive oil and lemon juice as preferred.
Toss everything well in the dressing except the protein and romaine lettuce. Gentley fold in the protein and romaine last.
Serve immediately. This recipe yields 2 servings.

Eileen’s Epsom, Baking Soda, Sea Salt Baths

Many times over the years, Eileen recommended the below “soak” to assist in healing crisis, after exposure to x-rays, in times of stress, and simply as a weekly balancer to help unload anything I had “taken on” energetically from others.

She recommended equal amounts of baking soda, sea salt & epsom salts to be added to the bath, soaking for 20 minutes. Next you get out of the bath, wrap yourself in a bath towel & relax for an additional 15 minutes before rinsing off.

These soaks have been a mainstay in my life for more than 30 years. I have also shared this remedy with my clients who have benefited greatly from them.

Although Eileen did not mention foot baths to me, many of my clients who have not had bath tubs , weren’t bath afficiandos, or simply wanted a quickie version, have used a plastic cat box, foot bath or even a large pot in a pinch to help themselves.

One of my favorite “time outs” is a 20 minute soak in a warm epsom salt and baking soda bath with equal amounts of unprocessed sea salt infused with essentials oils. The tensions and aches of the day literally float away! If I have been exposed to a lot of man-made EMF or if the solar flare activity is impacting me, I add a few drops of Flower Essence Society’s “Yarrow Environmental Solution formula”.

From ancient times, natural hot springs pools have been recognized for their restorative properties. Epsom salt baths and foot baths are the “at home” version of this time honored practice. The epsom salt compound is formed naturally from evaporated brine pools in the earth’s crust and is composed of magnesium and sulfates . Epsom salts are easily absorbed through the skin reducing inflammation, soothing sore muscles, and flushing toxins from the body while enhancing total mind-body relaxation.

I use 1 cup of Epsom salts, sea salt & baking soda to a warm to hot bath and soak for 15-20 minutes. For a foot bath, add 1/2 cup of each to your soaking container of warm to hot water and relax for 15-20 minutes. Wrap your feet in a towel for 15 minutes & then rinse off well.

The addition of any favorite essential oils amplifies the experience. For an alternative therapeutic soak, add equal amounts of natural sea salts such as Dead Sea or Himalayan instead of sea salt to your epsom/baking soda bath or foot soak. Make sure to use pure, USP Food Grade epsom salts for soaking.

Caution: If you have high blood pressure or any other medical condition, consult your medical doctor before using epsom/sea salt/baking soda soaks.

More Of Eileen Poole’s Remedies & Recipes – Dr. Bieler’s Yeast Restorative & Skin Masque

Over the years I was a client of Eileen’s she mentioned Dr. Bieler’s active yeast restorative many times which can also be made into a facial masque.

My husband & many of my client’s have benefited from the yeast drink when they have “run out of gas” from too much stress, work, celebrating.

For many clients with skin issues, this remedy has been a godsend…used both internally & externally.

This yeast used in this remedy needs to be ACTIVE DRY yeast used for baking NOT brewer’s yeast available in natural foods stores. Active yeast is much more alkaline and easily digested than the brewer’s yeast and will not cause digestive upset’s if taken properly.

Active yeast is chock full of B vitamins and is one of the most valuable remedies for toxic bile and acid. According to Dr. Bieler, because of it’s mild alkalinity, active yeast soothes inflamed surfaces (skin, digestive & elimination tract) & absorbs /neutralizes acids.

Acid, toxic bile from improper food combinations, in- appropriate food choices or food amounts can irritate the small intestine enough to cause spasms interrupting the normal peristalysis creating constipation & gas.

Yeast taken internally and applied externally in a masque has beneficial effect on the skin, most notably for acne & breakouts.

DR. BIELER’S RESTORATIVE YEAST DRINK

When I first heard of this remedy from Eileen in the early 80’s, Red Star Active Yeast cakes were still available. For the last decade, the only available active dry yeast is the Red Star Active Dry Yeast individual foil packets, unless you can buy some cake form from a bakery in your area. Most supermarkets and some natural foods stores carry the Red Star Active Dry Yeast packets.

Eileen said that Dr. Bieler recommended mixing 1 packet in warm water or warm raw milk and drinking first thing in the morning on an empty stomach. WAIT 1 HOUR TO EAT ANYTHING. Best taken again at night before bed at least 2 hours AFTER any food.

For those who are severly run down,the Yeast Restorative can also be ingested in the middle of the night .

VIP….. NEVER HAVE this active dry yeast drink with fruit juice or tomato juice..or followed by coffee, tea or your vitamins!! Always wait 1 hour before ingesting anything else.

If you experience some gas , it literally will pass in a few days after the liver has balanced/de-toxed.

YEAST & ROSEWATER FACIAL MASQUE

Mix 1 packet of Red Star Active Dry Yeast with enough rosewater to make a thick paste. Apply to face & neck avoiding the eye area and leave on for 15-20 minutes.

Wash off thoroughly with warm water , followed by some rosewater applied on a cotton pad as a toner, then moisturize.

I apply this masque once to twice a week.

Here’s the recipe for the soup created by Dr. Henry Bieler for his clients and given to me by Eileen Poole at my first visit in 1979. It has been a daily diet mainstay since I saw Eileen nearly 33 years ago. I have a cup in the morning with my steamed veggies, cooked grain & protein meal, a cup with lunch and a diluted cup by my bedside so I can sip it if I wake up. Eileen always recommended a short Bieler’s fast if I overindulged during the holidays, at celebrations or felt a bit under the weather…which always pulled me through or nipped the overload in the bud.

Years back, there was a fire in the apartment building where I lived resulting in a smoke inhalation project for me. When I called Eileen to tell her what happened sharing I had a sore throat, severe headache and very achy chest with spasmodic, dry coughing she suggested doing a 3 day Bieler’s Soup fast with a large squeeze of lemon added to every cup to clear the ill effects I was experiencing. By the third day all my symptoms were gone and I felt back to normal. I have used this remedy several times when I inhaled something that irritated my lungs or bronchial pathways with good results.


• Bieler’s Soup

*This soup is referred to as the “Miracle Soup” by many of my clients. They feel and look better with just 1-2 cups a day.

Ingredients:

4-6 Zucchini sliced (medium size)

1 lb Bag Fresh Frozen or Whole Green Beans

1 Handful of Parsley Tops (No Stems)

2 Stalks of Celery sliced with strings removed (Optional)

Fill a large pot with 1/3 water and add all the ingredients. Cover and cook in rapidly boiling water for 15-18 minutes until the vegetables are fork tender. Then place all ingredients in blender and puree in batches until smooth. Season with any of your favorite herbs, i.e., paprika, oregano, garlic, lemon, lime or basil. Serve hot or cold.

Do not add salt. You can add a pat of unsalted butter for extra body.

When I came to Eileen for some suggestions on something I could take out on my 2 hour trail rides with my horses or on long hikes, she suggested the following fortified smoothie recipe to keep my energy up without weighing me down or spiking my blood sugar.

This recipe is still my “go to” trail/hiking snack for hiking/long trail rides..or even if I’m on the go.

MT. CAPRA’S GOAT WHEY SMOOTHIE

2 heaping tbls. Mt. Capra Goat Whey
8 oz. unsweetened coconut milk, oat milk, or rice milk
1 tbls freshly ground flax seed
1/2 cup fresh fruit of choice
stevia to taste

Put all the above into a blender and puree until smooth. If this recipe is to be carried with you to be used later in the day, Eileen suggested partially freezing the smoothie so it would remain cold .

My favorite combos for fruit are: Peaches & strawberries, mango & papaya, papaya & blueberries, kiwi & papaya or raspberries & peaches.

If you don’t have time to freeze the whole mixture, the quick version is to use frozen unsweetened fruit instead of fresh.

One of the basics Eileen shared with me that was true for all clients is to work on eliminating concentrated sweetners in any form reserving them for celebrations and special occasions only. Concentrated sweeteners create an acidic environment in the body exacerbating all inflammatory conditions.

The avoid list is as follows:

White sugar, brown sugar, turbinado sugar, Succanat, molasses, corn syrup, fructose, honey, agave, date sugar, palm sugar, barley-malt, rice syrup, & rice bran syrup. Xylitol, maltilol, erythritol, and dextrose are all highly refined sugar alcohols that are best avoided.

Eileen told me many times that stevia & fruit juices were the preferred sweeteners for daily use, of course in moderation. Stevia is an herb that does not raise blood sugar, so for diabetics is safer than using fruit juices.

The balancing agents for a past or current overage in the concentrated sweetener category are the low starch vegetables category..with Bieler’s Soup being the foundation.

The basic rule of thumb is to shoot for at least 50% of your daily food intake in the low starch veggie category, including 1 or more cups of Bieler’s Soup.

SWEET CRAVING ELIMINATION RECIPE FROM EILEEN POOLE

During the first year or so with my new way of eating, I was experiencing some energy drops and sweet cravings in between meals. Eileen suggest that I make a green drink consisting of 1 tbls. spirulina powder & 1 tbls. high quality Brewer’s Yeast mixed into a warm or cold cup of Bieler’s Soup. I was to drink this “potion” mid-morning and mid-afternoon to give me the nutrients my body needed to quell the sugar cravings, smooth out my energy drops, and stabilize my blood sugar. Not only was this “remedy” satisfying, but within weeks did the trick for what ailed me. Over the years, whenever I veered back into sweets over the holidays, this was my “go to” remedy.

To this day, after nearly 26 years in practice as a holistic health care practitioner, I still recommend this remedy to clients who need it with great success. It’s an especially effective remedy to “get back on track” after a prolonged period of holiday celbrations/ “falling off the wagon”. Of course, those with Candida/yeast issues would omit the Brewer’s Yeast.

EILEEN’S TIPS FOR QUICK COLD & FLU RECOVERY

Over the years when I called Eileen for help with a cold or flu, she recommended either Source Naturals Wellness Formula, Zinc Lozenges, Oscilloccinimum homeopathic, or the Chinese Herbal formulas Gan Mao Ling or Yin Chaio as an extra support in addition to a short specific fast.

For colds or flu when I experienced chills & body aches /higher fever she recommended I take 1-2 capsules of the Wellness Formula twice daily the minute I felt anything setting in, then cutting back to 1 capsule twice daily until I felt better… or Gan Mao Ling if I had it on hand.

For colds with scratchy throat & low/no fever she recommended the Yin Chaio or Zinc Lozenges if I caught it before the cold set in.

For general prevention she suggested a vial of Oscilloccocinum once weekly during the cold & flu season.

Food Remedies:

If I had a flu expressing as a high fever with body aches, she would recommend papaya juice diluted 50/50 with distilled water until the fever broke alternating with homemade beef broth (NO SALT) made with the cooking water of zucchini. I then could add in mashed zucchini or diluted zuchini puree with sauteed extra lean ground beef every few hours alternating with diluted papaya juice at least 1 hour later until I felt better.

With most colds she recommended diluted papaya or apple juice alternating with Bieler’s Soup..sans celery for 2-3 days. Zinc Lozenges at the onset was a mainstay she recommended to me to shorten the duration of the cold.

With any cough or sore throat she always recommended staying away from eggs, the cabbage family veggies and turkey.
