EILEEN’S ENERGY PICK-ME-UP

In the early 80’s, I was working 2 jobs to save for acupuncture school and got pretty run down. Eileen first suggested Henry Bieler’s classic “pick me up” of raw liver juice..which is basically raw liver pureed with water and strained before drinking. I could not handle even the thought of this remedy let alone try it, so Eileen suggested an alternative. Her idea was to saute a piece of organic beef liver lightly so it is still rare and cut into slices. Eat 2-3 slices in between meals once daily for a few weeks. She recommended I have this with a large cup of Bieler’s Soup adding a couple of small slices of cooked yam for additional minerals if needed. At this time my digestion & elimination was very strong, so the combination of small amounts of starchy veggie with small amounts of beef liver worked well.

EILEEN’S VERSION OF DR. BIELER’S HOMEMADE EGGSHELL CALCIUM

One of Dr. Bieler’s remedies for adding additional calcium to the diet was ground eggshells. I also like the idea of using “the whole food” whenever we can. Here is the recipe Eileen gave me when I needed additional calcium, but could not tolerate any of the calcium formulas available at the time.

VIP……Make sure to only use organically fed, free range, preferabley fertile eggs for your “eggshell calcium”.

1) Wash leftover eggshells in warm water until the eggwhite is removed, taking care to leave the membrane which has nutrients to support joint health. Lay the washed eggshells on paper towels until fully dry. There is some controversy on air drying vs baking the eggshells in the oven to reduce any chance of bacterial residue, so use your own judgement on this point. I personally have been preparing my eggshel calcium via the air dry methods for years with no ill effects.

2) Powder the dried eggshells either in a small coffee grinder or place in two plastic bags and crush to a powder with a rolling pin.

3) Store eggshell powder in a glass jar with lid in a dry place like your pantry or kitchen cupboard.

According to my reseach sources, each 1/2 tsp. of eggshell powder yields 400-500mg of elemental calcium. Current thought is that in order to absorb the calcium you need to take it with vitamin D, magnesium (preferably citrate), and a small amount of vitamin C. …and absorb about 500 mg at one time. If you need more than 500 mg of calcium per day, it may be advisable to take one dose in the morning and one before bedtime.

When Eileen first recommended this to me, there was not the array of choices we have today in supplements. She suggested I take vitamin D and a little vitamin C with with the eggshell powder so I could absorb it better. Later as more formulas became available, I brought in “Pure Essence” Ionic Fizz Calcium Plus & Magnesuim Plus for her to check out. She told me it was a great formula for me and would agree with many people. Eileen also told me I could just take “Natural Calm” plus a small amount of “Alacer”, Emergen C Lite and vitamin D as an alternative.

The Ionic Fizz formulas are economical and well thought out providing a balanced co-factor profile for optimum utilization by the body. It also makes a tasty, refreshing drink!

Some folks take the eggshell powder dissolved in lemon juice that has dissolved at room temp for a few hours. You need to stir the concoction several times during the “mellowing” process, which is just too time consuming for me. I just place the eggshell powder in an empty gel cap and swallow it with my Ionic Fizz morning drink.

In the past few months I have read several abstracts that cite in double blind studies, that eggshell calcium powder combined with the additional vites/minerals mentioned above work as well if not better than other forms of calcium. Natural eggshell calcium also contains strontium and other nutrients that boost bone health. So once again, we see that Nature knows best giving us balanced nutrients in one whole package.

* Note: Dr. Bieler recommended taking 1/2 of a dime sized piece of eggshell and Eileen recommended a little larger than dime sized piece for me. Everyone is different in terms of their mineral needs, so start low and slowly increase the amount until you feel you are getting what is best for you.

Here are some of the natural remedies Eileen shared with me for insect bites and a non-toxic household ant repellant.

INTERNAL REMEDY FOR INSECT BITES

Take 3 drops of echinacea tincture mixed with 3 drops of goldenseal tincture in distilled water twice daily for 5-7 days.

TOPICAL REMEDY FOR INSECT BITES

Mix aloe vera gel with equal amounts of lemon juice and apply to the bite to reduce swelling and itching.

Of course with any insect or animal bite, eliminate all sugar and concentrated sweeteners from your diet and increase your low starch veggie intake along with liberal amounts of Bieler’s Soup. Since Eileen told me many times that a small amount (the operative word is SMALL here) of lemon acts as a cleanser to the system, I would always add a squeeze of lemon to my Bieler’s Soup.

I asked Eileen once about her feelings regarding the popular lemon juice/cayenne pepper/maple syrup daily cleanse and her response was that “less is best”, using a remedy as stimulating as this one only when needed AND if the adrenals are relatively strong/thyroid not over stimmed. She went on to say “when needed” would be at the onset of a cold or flu if the weather was cold and only once daily for a day or so.

HOUSEHOLD ANT REPELLANT

Mix together equal amounts of :

Epsom Salts & flour (any kind) with the white of one egg

Stir until well blended and sprinkle at the entrance of any ant trails. This remedy has always worked like a charm for me over the years!

Over the years as my health improved and my food choices became more varied, I asked Eileen for some recipes to serve when guests came over. Here are two terrific wheat free dessert recipes that never failed to please even the most jaded “guest” palate:

Eileen’s Kamut Bread Pudding

6 slices of Pacific Bakery Wheat Free ,Yeast Free Kamut Bread (or similar) ground into a coarse meal in a food processor

2 cups thinly sliced peeled Yellow Delicious apples cooked until tender in 1/2 cup un-sweetened apple juice

1 tsp cinnamon

1/4 cup un-sweetened frozen apple juice concentrate

2 egg whites stiffly beaten

3 tbls raw milk

2 tbls. raw unsalted butter melted

3 tbls raisons

3 tbls chopped pecans (optional)

Mix the bread crumbs, cinnamon well. Combine the applejuice concentrate, milk, and butter and then add to the dry mixture. Fold in the egg whites until well mixed adding the apples & raisons. Pour into a buttered small loaf pan and bake @ 350 for 35-40 minutes or until a toothpick inserted into the center comes out clean.

Can be served hot or cold topped with Rice Dream Ice Cream or Pure Decadence Ice Cream.

Eileen’s Simple Rice Pudding

2 cups of soft cooked long grain white Basmati rice

1 1/2 cups Vanilla Rice Dream

cinnamon to taste

2 tbls. chopped pecans 4 tbls. raisons

optional topping: raw whipping cream whipped with no sugar vanilla and a few pinches of stevia.

Combine the cooked rice & Rice Dream in a sauce pan and bring to a low boil stirring constantly until the mixture reduces to your desired consistency. Add the cinnamon, raisons, and pecans folding in well. Chill and serve topped with whipped cream.

During the first few years of changing to the Bieler/Poole way of eating, I had some bouts of falling off the wagon as well as a few healing crisis.

Since my “drug of choice” growing up was anything chocolate, this, of course, was also my treat of choice when I “went off my diet”. The combination of sugar, chocolate, dairy and/or wheat was very toxic to my system and would result in a sore throat within a few days of enjoying my treats. If I continued eating “my treats, mood swings would follow in short order from the blood sugar fluctuations and my energy would go up & down throughout the day.

In those early days it could take me anywhere from one to two weeks to get totally back on track and the resulting overload would imbalance my system stirring up a host of my old symptoms. As with any addiction, eating just one bite was not an option and would result in many days to weeks of eating sugar before I went back to health supportive eating.

When I would “fall off the wagon” Eileen would always tell me to be easy on my self about lapsing into my old eating patterns and to just eat a small amount of whatever protein was allowed on my diet every few hours accompanied by Bieler’s Soup for a day or so until I felt better. This worked like a charm most of the time to stabilize my blood sugar, moods, and energy in just a few days. Then I would go back to whatever my current eating plan was.

If my increased sugar intake lasted longer than a week, a healing crisis(aka overload) was likely to occur, usually for me manifesting in a sore throat accompanied by a fever . Eileen would then recommend for me, diluted fruit juices from the allowed fruits on my current diet every few hours until my temperature returned to normal. This would balance the sugar overload and then after a few days with just Bieler’s Soup and small amounts of protein every few hours, I could return to my current eating plan symptom free.

Once when I had an extended period of celebrations back to back during the Xmas Holidays, my crisis/overload manifested in the deeper layers as a mucous type cough. Eileen suggested that I have a diluted cup of grapefruit juice or pineapple juice in between my meals until the cough and mucous resolved…with of course liberal amounts of Bieler’s Soup to assist in restoring balance to my system.

About four years into of eating this new way, feeling better than I had ever before, I went back to including my favorite treats first a few times a month, which escalated into a few times a week. After a few months of the frequent sweets, most of my symptoms returned and I went to see Eileen very distressed by this experience.

Eileen explained that the old way of eating was what caused my health issues and if I went back to that old way again, the same symptoms would re-occur. Those foods were simply not good for my system no matter how many years I ate health supportively. It would only be a question of how much and for how long before the overload would occur. She also shared that eventually I would be able to enjoy treats for an occasional celebration. She pointed out that my body would tell me how much was appropriate if I paid attention to the subtle signals such as waking up a bit more tired, having less patience, a slight drop in energy and not sleeping as well..all signs of an impending overload.

From that day forward, I resolved to look at this new way of eating as a lifestyle change which would support me in good health for a lifetime instead of just a ” temporary diet” until I felt better.

My Favorite Recipes From Eileen Poole

Here are a few of my favorite recipes from Eileen Poole:

Years ago when I was working long days and going to acupuncture school at night, Eileen recommended this recipe to me to keep my energy steady by starting the day off right.

EILEEN’S HEARTY BREAKFAST SKILLET MEAL

1 medium zucchini thinly sliced

2 free range, fertile eggs

2 tsp. hazelnut oil

2 tbls. chopped parsley or cilantro

1 small pinch of Celtic or Himalayan salt

* optional: 1/2 cup cooked brown rice, quinoa, oatmeal, buckwheat, or rye flakes.

Arrange the zucchini slices on the bottom of a non stick skillet and add about 1/3 cup of water. Cook covered over medium heat until the zucchini is just fork tender. Remove the lid letting any remaining liquid to almost evaporate. Add the oil and break the two eggs over the zucchini topping with the parsley or cilantro and pinch of salt. Cover for 2-3 minutes or until eggs are just set. Slide out of skillet onto your bed of grain. Serve with an additional cup of Dr. Bieler’s Soup for maximum health benefits.

NOTE: I always have containers of cooked grains on hand in the frig making it quick and easy to add to meals or snack. To add some texture and variety, I mix two different grains together.

Since I am a predominant “Thyroid Type” in Dr. Bieler’s system with weaker adrenals, Eileen told me I would always need a bit more protein to even me out and support my adrenals. She told me the small pinch of salt early in the day would also give a small lift to my adrenals without over stimulating them. According to Dr. Bieler & Eileen, Thyroid Types need a little more starch in their diets than the other endocrine types especially in colder weather. Eileen also recommended I have a good quality cold pressed hazelnut oil in small amounts a few times a week to support my central nervous system which tends to be sensitive.

This next recipe is a light, satisfying snack I can easily carry with me when I’m on the go.

EILEEN’S CREAMY FRUIT SMOOTHIE

1 cup un-sweetened oat/rice/coconut milk or raw goat’s/cow’s milk if you can handle it

1 banana or 1 cup raw low acid fruit of choice (no melons)

2 tsp. of freshly ground flax seed

Put all the above in a blender and frappe until smooth.

NOTE: If I’m taking this with me for later in the day and have no refrigerator available, I will partially freeze the mixture in the container I will be taking with me. This way it is thawed by the time I will use it.

My favorite fruits to use are: papaya, blueberries, raspberries, strawberries, Babcock peaches & kiwi. Sometimes I add some lemon or lime zest for flavor before blending.

Eileen always told me that bananas were best eaten as the only fruit in recipes because they are so rich and filling. I will often mix small amounts of several different fruits for variety…of course not with bananas.

Eileen suggested this next recipe to me many times over the years when I’ve felt run down or just needed a pick me up.

EILEEN’S VERSION OF A QUICK EGGNOG

1-2 raw, fertile egg YOLKS

1 cup raw cow’s or goat’s milk

1 tsp. no alcohol, no sugar vanilla extract *optional *

* optional: 2 pinches of stevia powder

Blend well with either a hand blender or in a blender.

NOTE: Eileen told me this recipe was best taken in between meals, first thing in the morning 1 hour before breakfast, or as a meal substitute. When I was going through menopause, she suggested I have an egg nog before bed to help lull me to sleep. In the early days, stevia was not in the recipe. It’s also something Dr. Bieler mentions in both his books sans the vanilla and stevia as a tonic for the adrenals.

Since stevia became available, Eileen told me I could use it daily if I wished in small amounts. She also said most people can handle it if used in small amounts because it is of course very concentrated. Eileen also shared that she found stevia functioned like a tonic in small amounts.
