How Eileen Poole and the Wisdom of Dr. Henry Bieler Changed My Life

Eileen Poole was a gifted intuitive nutritionist based in Los Angeles who helped thousands of people restore their health through natural foods and lifestyle guidance. Often described as a “food psychic,” she combined extraordinary sensitivity with deep knowledge of Dr. Henry Bieler’s teachings, creating personalized food plans that addressed not just physical symptoms but also emotional and spiritual imbalances. For more than four decades, she became a trusted guide for those seeking healing outside conventional medicine, blending intuition, experience, and compassion in a way that transformed countless lives.

A sickly start

My journey on the path to wellness began in 1979, after many years of persistent health issues. What follows is the story of how I found my way guided by the extraordinary insights of Eileen Poole and Dr. Henry Bieler.

Throughout my childhood, I was under weight and chronically ill. My well-meaning mother did everything she could to help me gain weight by feeding me cheeses, peanut butter, milkshakes, and pastries. Despite her efforts, I suffered from constant bronchitis, which eventually turned into chronic sore throats and recurring strep infections after my tonsils were removed. I was on antibiotics 3–4 times a year for most of my young life.

The Turning Point

At 21, shortly after moving to Los Angeles, I began experiencing dizzy spells. After a battery of medical tests, my doctor diagnosed me with severe hypoglycemia and prescribed a high-protein “hypoglycemic diet.” It did help….at first.

After a couple of years following this diet, my symptoms returned with a vengeance. I was still struggling with sore throats and bronchitis, and began experiencing intense PMS, debilitating menstrual cramps, and uncontrollable sugar cravings. Desperate for relief, I began reading books by Adele Davis, Bernard Jensen, Paavo Airola, and George Ohsawa. I also consulted with various nutritionists, trying everything from raw food and macrobiotics to piles of supplements. None of it helped for long.

To my dismay, I began gaining and losing weight unpredictably, despite my commitment to eating a “healthy diet” consisting of whole grain wheat bread, tofu, beans, cheese, fruits, and vegetables. I couldn’t understand why I still felt so awful.

Meeting Eileen Poole

In the summer of 1979, my mother called to tell me about a remarkable “psychic/intuitive nutritionist” in Los Angeles named Eileen Poole, who had reportedly helped many people heal with natural foods. Skeptical but desperate, I booked an appointment.

In our first session, Eileen told me I was highly sensitive to wheat, corn, soy, and dairy, and that I was “sugar and starch poisoned.” The weight fluctuations I was experiencing were, in her words, “toxic bloat” caused by these sensitivities. She explained that my earlier high-protein diet had overloaded my system, and my later vegetarian stint had depleted me of necessary protein, leaving me “protein deficient.”

She put me on a very strict initial plan consisting of un-limited low-starch vegetables (steamed and raw), two 6 oz. servings of animal protein daily, 1–2 soft-boiled eggs at breakfast with steamed vegetables, and unlimited Bieler’s Soup. No fruits, grains, or starchy foods of any kind for the first three months—and no vitamins or supplements until our next visit.

Discovering Dr. Bieler

Since I expressed a deep interest in understanding natural healing, Eileen recommended I read Food Is Your Best Medicine and Dr. Bieler’s Natural Way to Sexual Health by Dr. Henry Bieler. I devoured them, reading both several times and even creating an A-to-Z binder of Dr. Bieler’s “food cures,” which I still use to this day.

Remarkably, within just a few months, the PMS and menstrual cramps began to ease. At my next appointment, Eileen slowly expanded my diet to include some fruits, grains, yogurt, and a few targeted supplements.

When I told her I felt unfulfilled in my job and unsure of my path, she gently encouraged me to study the ancient Japanese healing art of Jin Shin Jyutsu®, suggesting that I would one day share what I learned with others.

A New Life Unfolds

Over the next year, I followed Eileen’s evolving plans as closely as I could. My weight stabilized. The sore throats became occasional, only triggered by sugar. My energy evened out. After four years, the PMS and cramps were gone entirely, unless I strayed from the guidelines.

It was through Eileen’s life-changing work that I came to fully appreciate the depth of Dr. Bieler’s wisdom. Inspired, I went on to study holistic healing extensively, completing over 13 years of training in traditional Asian healing arts, including 2½ years in acupuncture school, and certification in Jin Shin Jyutsu®. Later, I also studied the work of Dr. Elliot Abravanel and Elizabeth Morrison, deepening my understanding of healing through natural food and energy work.

From 1979 until Eileen’s retirement in April 2011, I met with her every 3–4 months to refine my food plan and seek guidance. Her insights helped me stay balanced, not just physically, but emotionally and spiritually. In the early years, it was hard to stay perfectly on track, but as my health returned, the “falling off the wagon” moments became rare. When I added daily Jin Shin Jyutsu® self-care routines learned from my certification work, even the sugar cravings disappeared.

Lifelong Gratitude

More than 30 years later, I no longer crave sugar, I maintain a steady weight effortlessly, and I rarely experience illness. When I do, I recover quickly using the tools Eileen and Jin Shin Jyutsu® gave me. I still revisit Dr. Bieler’s books and the notes I took from taped sessions with Eileen..

I will always be deeply grateful to Eileen Poole for helping me reclaim my health, for introducing me to Dr. Bieler’s work, and for planting the seeds of what has become my life’s work and greatest passion.

Though I wish I could thank them both in person, I trust they would be proud to know I’ve passed on what I learned helping others experience their own healing miracles naturally.
